We provided full Project Management and Quantity Surveying services for the creation of Aimsir, an intimate 24-seat fine dining restaurant set within the 16-acre walled gardens of Cliff at Lyons — a beautifully restored historic estate in Co. Kildare, originally a thriving milling village along the Grand Canal, just 30 minutes from Dublin.
Named from the Irish word for weather and season, Aimsir was conceived as a celebration of everything that can be sown and harvested, fished and foraged on the island of Ireland. The restaurant was led by Cornwall-born chef Jordan Bailey, former head chef at the three-Michelin-starred Maaemo in Oslo, alongside his wife and front of house manager Majken Bech-Bailey. In a remarkable achievement, Aimsir was awarded two Michelin stars less than five months after opening in April 2019 — making it one of only four Irish restaurants ever to have received this accolade — a testament to the exceptional quality of both the culinary vision and the environment created to house it
